“Fork” each breast by taking a fork and quickly stabbing each breast all over to help tenderize. You can also use a commercial 'blade' meat tenderizer.

What is the best way to eat goose? ›

You can marinate goose meat like steak for fajitas. You can slice it lengthwise, so you have cutlets, for jagerschnitzel, goose parmesan, or goose tacos. Goose pastrami is a great way to eat Canada goose breasts.

Which wild goose tastes best? ›

It's diet related. Pacific brant eat eelgrass, which gives them wonderful white fat that is not at all fishy. Atlantic brant eat sea lettuce, a seaweed, and their fat stinks of low tide. Whitefronts (specklebelly geese) are universally regarded as the finest wild goose for eating.

Should you brine goose before cooking? ›

Dry-brining the goose ensures that the meat remains especially moist and juicy. The added baking powder also helps it develop extra-crisp skin.

What do you soak goose breasts in? ›

A litre of cold water mixed with ¼ cup of coarse salt and¼ cup of brown sugar makes the perfect waterfowl brine. Soak duck and goose meat in the brine for 8 to 12 hours, and you'll see the difference in color. Much of the blood stored in the meat is drawn out by the brine. Temps and tips.

What do you soak goose in? ›

Always Brine Ducks and Geese

Soaking waterfowl in a saltwater solution replaces blood with brine. The process also adds flavor and moisture. Once brined in the refrigerator for 12 to 24 hours, the meat will be paler in color, giving it less of a livery look and more the appearance of domestic meat.

Why is goose no longer eaten? ›

Goose has generally been replaced by the turkey in the United States. In the United States, the high price per pound of goose, coupled with the large size of the bird and low yield of meat to bone and fat, makes a goose more expensive per serving than Turkey.

Why pour boiling water over goose before roasting? ›

To achieve crisp fat, I recommend starting the day before roasting. Scald the bird over a sink on a wire rack with 2 or 3 kettles of boiling water slowly poured over the bird, pat dry, then leave uncovered in the fridge overnight.

Can you make goose taste good? ›

You can stick with your favorite steak rub, or keep it simple with salt and pepper. You can add aromatics and herbs to the bag while cooking to impart some flavor. My favorite addition is a clove of garlic and sprig of rosemary. The choice of sides and accompaniments is up to you (mine change with the season).

What is the difference between a goose and a wild goose? ›

Wild goose meat tends to be leaner and may have slightly different proportions of nutrients like protein and fat compared to the more intentionally fattened meat of domesticated geese.

What meat is goose similar to? ›

Duck and goose are poultry and considered "white" meat. Because they are birds of flight, however, the breast meat is darker than chicken and turkey breast. This is because more oxygen is needed by muscles doing work, and the oxygen is delivered to those muscles by the red cells in the blood.

Which tastes better goose or turkey? ›

The most flavoursome birds derive from free-range, slow-growing turkeys – especially bronze varieties – which have had time to mature and produce some lean fat. Goose, on the other hand, has a much stronger, more 'gamey' flavour, a little like duck.

What happens if you don't boil your brine? ›

Tip: There is no need to boil all the brine liquid because you can fully dissolve the salt and sugar and extract the flavor out of any seasonings in 1½ cups of liquid.

How is goose supposed to be cooked? ›

Rub all over with the oil and season generously with salt. Sit the goose on a rack in a large roasting tin and tightly cover with a large piece of foil. Cook for 1 hr 30 mins. Remove from the oven, remove the foil and use oven gloves to lift the rack (and the goose) out of the roasting tin.

How do you tenderize a goose? ›

It's a cooking method that involves encasing seasoned meat in a vacuum-sealed or food-safe plastic bag and submerging it in a circulating hot water bath. Meats poach in their own juices, and even the largest goose breast fillets will be fork tender after several hours in 130-degree water.

Why is my goose breast tough? ›

The toughness is usually a result of overcooking, but there are winged and four-legged critters that can be a bit chewy even when cooked properly. When grilled, a breast fillet from a mature giant Canada goose is never going to taste like one from a young specklebelly.

Should you soak goose breast in salt water? ›

I do not cook a duck or goose without first soaking it overnight in brine. Those of us who have discovered how much better the Thanksgiving turkey tastes after a brine bath for 24 hours know that the bird will not only cook a little faster but it will also be more moist and flavorful than an unbrined bird.

Should you brine goose meat? ›

If you have purchased farm-bred goose, the fat content is probably too high. If you have wild goose, a brine would probably be a great idea. I usually cook wild goose in a stew, so that the moisture level is high since wild goose are very lean birds.

Why was my roast goose tough? ›

Like duck, it's also a red-meat bird and goose breast is meant to be cooked medium-rare. You'll want to watch the cooking closely, the overcooked goose isn't like overcooked chicken or turkey. Instead of turning dry and stringy, it will become tough and chewy and taste like liver.
