Recipe For A Quesadilla With Bacon

Bacon and cheese are a match made in heaven. When a recipe allows you to mix them together in a tortilla and sneak in a veggie – this is what winning at the dinner table feels like!

Our son has really hit a growth spurt and he is ramping up his caloric intake in big ways. I like to make these quesadillas or our Pulled Pork Quesadillas as an afternoon snack. A bonus is he didn’t even notice the vegetables the first time I added spinach.

Everyone in our family loves cheese. So, we mix slices of sharp cheddar with slices of Colby jack for extra flavor. We add bacon for protein.

Spinach is high in vitamin A and vitamin C and is a great source of fiber, so we like to sneak some into this dish. When spinach is warm it wilts and blends nicely into the cheese. Baby spinach is a bit milder in flavor, so it works great in the quesadillas too.

We like to bake a pound of bacon on the weekend. We enjoy a couple strips for breakfast and keep the rest in the refrigerator for recipes just like this and our Red Potato Casserole or .

Ingredients Needed:

  • Flour Tortillas – Our favorite is the Ole Mexican Foods Xtreme Wellness high Fiber 9″ tortilla wraps.
  • Bacon – We always use baked or fried bacon, preferably thick cut!
  • Cheddar Cheese – Slices make a uniform layer of cheese across the whole quesadilla.
  • Colby Jack Cheese – Using two cheeses gives more flavor contrast to every bite.
  • Spinach – An optional add-in, regular spinach with stems removed is great and baby spinach works well too.
  • Mayonnaise or Butter – Mayo makes the outside more crispy where butter adds flavor, but it is a bit softer of a toasted outside finish.
  • Ranch – You can add a thin layer of ranch inside the quesadilla if you want a more herby flavor.

How to Make Bacon and Cheese Quesadillas

  1. Cover flour tortillas with butter or mayo if desired. Tortilla can also be laid directly in a skillet over medium high heat.
  2. Cover each half of tortilla with a different type of cheese. Covering with the skillet with a lid can help hold in the heat and speed up the process of the cheese melting.
  3. When the cheese is melted sprinkle the bacon and spinach evenly over one type of the cheese.
  4. Fold tortilla in half and serve warm.

Step By Step Instructions

Place a skillet and turn to medium heat.

Begin by spreading a thin layer of mayonnaise over one side of each tortilla.

Place the side with mayo in a warm skillet and put two slices of cheese on the tortilla.

Then space bacon over half of the tortilla.

Remove the stems from the spinach for a neater look if you’d like. Add about two layers of leaves on top of each other on the other half of the tortilla.

Ensure that the cheese is totally covered.

Once the cheese melted and the outside of the tortilla is slightly browning and fold in half.

Place a spatula under the side with spinach and fold over on top of the half with bacon.

Cook for another 1 to 2 minutes until the tortilla is more stiff than floppy.

Serve warm and enjoy.

Tips For Making Quesadillas

  • Make this recipe easier by making one quesadilla at a time. Lay the flour tortilla out flat in the skillet. Cover each half with a different type of cheese. Once the cheese starts to melt add cooked bacon and spinach, then fold in half. Another minute or two on medium heat and the cheesy, bacon treat is ready!
  • Keep the cheese 1/4 inch from the edges because it will move and ooze a little bit as you fold it. You may need to overlap the cheese in the center to accomplish this depending on the size of the tortilla.
  • Butter can be used in place in mayo for a softer outside finish and a little extra flavor.
  • Cut each tortilla in halves or in quarter for smaller pieces.
  • Whole slices of bacon makes a prettier appearance, but pieces of bacon can be a little easier to eat.

Reheating and Storage

These quesadillas reheat well in the microwave, skillet or air fryer.

Store in the refrigerator in a self sealing bag or air tight container for up to 4 days.
