Hello everyone!
Well, hello, March, too. We’ve been waiting for your :) March didn’t bring spring weather – not yet – to Canada, through. Indeed, we are expecting another snowfall on Thursday and Friday. Something between 15 and 25 centimeters, but they are not 100% sure. That means, they are not quite sure about the total amount (and I won’t be surprised if we end up with more than 25 centimeters of snow.) UPDATE: I started writing this post yesterday. As of Thursday morning, we are expecting up to 30 centimeters. Clearly, I should not delay with finishing it. Otherwise, I could und up with the entire paragraphs with live updates LOL.
Well, what can you do? Technically, it is still winter for another couple of weeks. Hence, no complains.
Beetroot Horseradish Soup
And since winter weather continues, I am happy to keep posting hearty and comforting recipes. Also, comfort food doesn’t mean heavy and unhealthy food. Light soup is an excellent alternative. Serve it with some crusty bread or even grilled cheese, and that will fit the bill!
This Beetroot Horseradish Soup fits the bill, too.
Made with just a couple of simple ingredients and without any cream or butter, it is definitely healthy. Plus, the addition of horseradish is also a warming element; also good for your immune system, digestion, and metabolism. It’s a win-win (or a win-win-win-win!) I used prepared horseradish from the jar, but feel free to use fresh (it could be more potent, so you might need to adjust the amount.)
Lastly, it’s super easy to make and versatile. Basically, it will only require about 15 minutes of your time, and then you can leave it unattended while it’s simmering. You can jazz the flavour up, too. Think of adding an apple for sweet and sour notes, different herbs, and spices. (Personally, I think a touch of caraway seeds, fennel seeds, or cumin would be great!)

This Beetroot Horseradish Soup is healthy and light yet ultra hearty and warming recipe that will be perfect for a chilly day!
Ingredients
1 tbsp. olive oil
1 large red onion, sliced
2-4 garlic cloves, minced
~ 2 lb. of beets, peeled and chopped
5-6 cups of water or light broth
1/2 tsp. dried or 1 tsp. fresh rosemary, minced
1 tsp. dried or 1 tbsp. fresh thyme
1/2 to 2/3 tsp. salt or to taste
pepper, to taste
1-3 tbsp. prepared horseradish or to taste
Directions
- In a large pot heat the oil over low-medium heat. Cook the onions and garlic, for 5-7 minutes, until soft but not browned.
- Add the beets and cook for about 5 minutes.
- Add the water or broth to fully cover the beets. Season with the salt and pepper and stir in the herbs. Cover and let it simmer for about 45 to 60 minutes, or until the beets are tender.
- At the end, stir in the horseradish and let it simmer for 5 minutes or so.
- Off the heat and let the soup cool a bit, until easy to handle. Using a regular or immersion blender, pure until the desired consistency (pro-tip: for the extra smooth and silky texture, you can add a spoon or so of butter when pureeing.) Add more water or broth, if it’s too thick to your liking. Try and adjust the seasoning, if needed. Serve garnished as desired; you can even add an extra spoon of horseradish. Enjoy!
