Great recipe. As usual I modified like I do with almost every recipe I try. I added and stirred in quite a bit of dry fruit before adding condensed milk (raisins, almonds, pumpkin seeds, flax seeds etc). Did not use sugar but added a tbs Honey to make it soft as my extra ingredients were making it too dry. Net result, amazing. Thanks for the recipe. Will be used quite often. Easy and taste to die for.

MILKMAID is a rich & smooth sweetened condensed milk - the dessert partner that helps you make a range of mouth-watering sweets at home - be it Kheer, ice creams or cakes. It's versatility lends itself well to both traditional & western desserts.
A popular method of making Burfi is with condensed milk. This negates the requirement to add sugar, since the condensed milk is sweet enough. Many recipes simply call for milk powder and condensed milk. While this is a perfectly delicious way to make burfi, the end result is very smooth and Peda like in texture.
Evaporated milk has added sugar and carbohydrates which are very high, making sweetened condensed milk not healthy for nutritional intake for babies and children, Ali explained.
Like milk, condensed milk is a good source of calcium, vitamin D, vitamin B12, vitamin A, riboflavin, phosphorus and protein. These nutrients are necessary for strong bones and teeth, a robust immune system and a healthy cardiovascular system.
Using the abundant supplies of fresh milk in Switzerland, they start Europe's first production facility for condensed milk. They sell the milk under the Milkmaid brand.
Due to the sugar addition, condensed milk is more durable than evaporated milk. The benefits of regular milk are boosted in condensed milk since it contains more sugar. Condensed milk is a good source of these nutrients in addition to calcium, vitamin D, vitamin B12, vitamin A, riboflavin, phosphorus, and protein.
Barfi not setting is a sign that your mixture is undercooked, you can reheat the mix for a few minutes and set it again. You know the mixture is ready when it's thick and comes together in a ball.
Barfi (also spelled as burfi, barfee and borfi) is a dense, fudge-like, perfectly crumbly, melt in your mouth, milk-based Indian sweet (mithai), usually made with milk powder and sugar. The word barfi originates from the Persian word barf, which means snow.
Barfi is one of many milk-based Indian sweets. Traditionally, it would have been made by slowly cooking milk down for hours until it condensed into the dough-like evaporated milk solids known as khoya or mawa. A quicker and easier way of making barfi starts with milk powder instead.
Besan Burfi or Besan ki Barfi is an Indian dessert made with gram flour, ghee, and sugar syrup and is laced with aromatic cardamom and saffron. These golden-hued squares are often made during festivals and special occasions--favored for their taste, as well as, their visual appeal on a pretty dessert tray.
This sweet is not an “indulgence” because it is truly healthy for you to consume, unlike dairy-laden traditional sweets. You will be over the moon to know you can finally have your favourite sweet without worrying about your health!
There are two reason for this, either it is not completely cooked or you had put that burfi mixture on flame while cooking for more than the required time after adding sugar into it.
If you don't have sweetened condensed milk, you can make your own using evaporated milk and sugar, or you can bring 3/4 cup of white sugar, 1/2 cup of water, and 1 1/8 cups of dry powdered milk to a boil and cook, stirring frequently, until thickened, about 20 minutes.
Although evaporated milk and condensed milk are both shelf-stable milk products that are produced in similar ways, they're not the same. The main distinction is the addition of sugar in condensed milk, which yields a different texture and flavor profile.
Condensed milk is evaporated milk that typically has sweetener added, so much so that the terms 'condensed milk' and 'sweetened condensed milk' are used interchangeably.
Condensed milk comes in regular, low-fat, fat-free, and even chocolate varieties. You will readily notice that sweetened condensed milk is darker, more yellow in color as well as being extremely thick like molasses. Evaporated milk is slightly darker in color than whole milk, but pours the same.
