If there's the possibility of turning a food "Greek, I'm going to do it. Whether it's salad, lasagna, meatball subs, or nachos, I want it Greek style! I'm sure it's tied to my love of feta and olives, but I can never get enough of it.

Of course, chicken is one of the easiest foods to customize to your liking. It's like a blank canvas ready to be altered with all your favorite flavors and ingredients.

When I started craving Greek food and I had a couple nice chicken breasts waiting in my fridge, I knew just what I was going to do... Make Greek-stuffed chicken!

This is an easy, great for a weeknight recipe and simply requires mixing up the ingredients, stuffing the chicken and baking it.

Ingredients

This easy chicken recipe doesn't even require too many ingredients... But it packs in a whole lot of delicious flavor! Here's what you need:

For filling:

  • ⅓ cup crumbled feta
  • ¼ cup chopped kalamata olives
  • ¼ cup diced red onion
  • 3 Tbsp chopped sun-dried tomatoes
  • 1 Tbsp chopped parsley
  • 1 tsp lemon juice
  • ¼ tsp pepper
  • ¼ tsp ground oregano

For chicken:

  • about 1 lb. chicken(2 large breasts)
  • ½ Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

How to make Greek-stuffed chicken

As I mentioned, this is one of the easiest chicken dishes ever. It really only has two main steps.

Mix all the filling ingredients together in a medium bowl. Preferably, as you sing... "these are a few of my favorite things!"

Then cut slits into the chicken breasts, rub olive oil over them and sprinkle with salt and pepper.

Stuff the chicken breasts full of the filling mixture.

I stuffed a ton of the filling into the chicken. I wanted them full loaded!

Place the chicken on a pan covered with foil and bake it at 350 for 25-30 minutes, until chicken is cooked through and/or registers at 165 degrees on a meat thermometer.

And behold... This is my idea of heaven!

The filling will get a little browned and crispy and will be everything you've dreamed of. If you're like me. The flavor punch of kalamata olives, feta, and sundried tomatoes will always make me happy.

I created this as a meal for two, but you can easily make more. You also don't have to stuff the chicken with quite as much filling as I did!

I served a simple spinach and tomato salad alongside my chicken, but there are so many sides that would be delicious with this! Here are a few ideas:

Ingredients

  • cup crumbled feta cheese
  • ¼ cup chopped kalamata olives
  • ¼ cup diced red onion
  • 3 Tbsp chopped sundried tomatoes
  • 1 Tbsp chopped parsley
  • 1 tsp lemon juice
  • ½ tsp pepper, divided
  • ¼ tsp ground oregano
  • 2 large chicken breasts (about 1 lb. chicken)
  • ½ Tbsp olive oil

Instructions

  • Pre-heat oven to 350 degrees and cover a baking sheet with foil.

  • In a medium bowl, combine feta, olives, red onion, sun-dried tomatoes, parsley, lemon juice, ¼ tsp pepper, and oregano.

  • Place chicken on a cutting board and using a sharp knife, make a deep horizontal slice in each chicken breast. Make sure not to cut all the way through. Rub olive oil over chicken and sprinkle on salt and remaining ¼ tsp pepper.

  • Stuff each chicken breast with as much of the filling as you want.

  • Place chicken breasts on prepared baking sheet and bake for 25-30 minutes, until chicken is cooked through and/or registers at 165 degrees on a meat thermometer.
