Delicious Sausage Casserole

Who doesn't love sausages? okay okay I know there is possibly the odd few out there that don't, but for those that do, what better way to enjoy them, than in a casserole packed with healthy vegetables.

I love to make casseroles or my family. It is a perfect way to get them to eat plenty of vegetables, as trust me, if I put all those vegetables on their own on the plate, chances are my kids won't eat most of them. However, put them in a casserole or stew-like this Sausage Casserole and they will happily scoff the lot - go figure!!!

Bread for casseroles!!

Whenever my mum used to make a stew or casserole, it involved lots of white buttered bread on the table. That was a hard habit to shift let me tell you and probably exactly why buttered bread is a weakness for me.

If you love your bread too, have you seen this yummy Soda Bread which you can enjoy as part of your HEb? It's good clean ingredients and great for mopping up all the sauce of a stew or casserole or with that bowl of soup.

I love to bake one of these when I fancy some bread with this Sausage Casserole.

Types of Sausages for Casserole

So what type of sausage should you go for? Well low calorie option is definitely the best choice, as it will keep this casserole healthier and lower in calories.

I tend to go for Turkey or Chicken Sausage here in Canada as they are a decent size and do a Mild Italian variety which is flavoured with fennel and that works perfectly in this casserole.

You can use pork too of course, but they do tend to be higher in points or a little dry if not.

Just choose your favourite variety and points accordingly.

Sliced or Whole Sausages in a Casserole?

If you want to use a good quality sausage that is higher in points, a great tip is to slice it up into small pieces rather than adding them into the casserole whole. It makes them go further as you don't need to use as much sausage.

I tend to do this regularly with this casserole if I can't get a low-fat sausage. Just as tasty and the kids love it, as they little bites of sausage are almost like little sausage meatballs.

But when I can get some of my favourite Mild Italian Turkey Sausage, they go in whole for this delicious Sausage Casserole.

Sides for Sausage Casserole

If bread is a weakness for you with a casserole or stew, a great way to combat the craving for something starchy like that with your casserole is to serve it alongside some crispy Roast Potatoes or this Garlic and Herb Roast Potatoes.

or one of my favourites sides to serve alongside this is this delicious Rustic Garlic and Parmesan Mash there is also this Mashed Potato and Mashed Sweet Potatoif you prefer just regular mashed potatoes.

If you are trying to be healthier and include more vegetables then a great side option is this Sour Cream and Onion Cauliflower Mash

Hearty Sausage Casserole

Yield: SERVES 3

Cook Time: 50 minutes

Total Time: 1 hour 5 minutes

Delicious Sausage Casserole - There is nothing more comforting than digging into a hearty dish of sausage casserole - it's a family winner!!

Ingredients

  • 1 large onion, chopped
  • 2 cloves of garlic, crushed
  • 200g of butternut squash, cubed
  • 6 low-fat sausages - *see note (I used Mild Italian Turkey Sausages)
  • ½ red pepper, sliced
  • ½ green pepper, sliced
  • 1 small courgette (zucchini), quartered and sliced
  • ½ cup of frozen peas
  • 2 tbs of tomato paste
  • 1 teaspoon of mixed herbs
  • 1 tablespoon of balsamic vinegar (good quality brand)
  • ½ teaspoon of tabasco sauce (can add more if you like it spicier)
  • 1 cup (240ml) of chicken or vegetable stock - (use slightly less stock for slow cooker method)
  • 1 can of cannellini beans (with juice) - or another white bean of choice
  • cooking oil spray
  • Salt and black pepper to season.
  • Fresh chopped parsley

Instructions

Stove Top:

  1. Spray a large casserole dish with some cooking oil over medium heat.
  2. Brown the sausages lightly on all sides, removed and set aside
  3. Spray with some more cooking oil spray, add the onion and fry for a couple of minutes to soften.
  4. Add in the balsamic vinegar and a little of the stock and deglaze the pan scraping off any bits stuck to the bottom of the pan.
  5. Add in the butternut squash, peppers and garlic, plus the mixed herbs, tomato paste, tabasco sauce, stock and can of cannellini beans (including juice)
  6. Bring to a boil, then reduce heat to a simmer. Place in the sausages, cover and simmer for 40 minutes.
  7. Add the peas and courgette for the last 5 mins of cooking time.
  8. Taste and season with salt and black pepper.
  9. Sprinkle with fresh chopped parsley. Serve with your choice of sides.
  10. Enjoy

Slow Cooker:

  1. Brown sausages and onion as per steps 1-4 above.
  2. Add to a slow cooker with all other ingredients, apart from peas and zucchini
  3. Cook on low for 6 hours.
  4. Add the zucchini and peas in for the last hour of cooking time.
  5. Taste and season with salt and black pepper.
  6. Sprinkle with fresh chopped parsley. Serve with your choice of sides.
  7. Enjoy
