    So the holidays are over and you are probably wondering what to do all of that leftover turkey. With a few simple ingredients, you can create a delicious turkey pie!

    Turkey

    You can use any part of the turkey as long as you remove the bones. The easiest part to start with is the breast of the turkey.

    Vegetables

    For this recipe, I use frozen mixed vegetables. This mixture includes carrots, peas, green beans and sweetcorn. You also can use leftover vegetables or fresh vegetables.

    Roux

    For this recipe, you will need to make a roux. This is a classic butter, milk and flour mixture that creates a creamy base.

    • I used unsalted butter but you can also use salted butter. If you use salted butter be mindful of how much salt you add to the filling.
    • Dairy milk but if you would prefer a healthier option then you can use low fat milk.
    • Use all purpose or plain flour for this recipe.

    Puff Pastry

    I used shop-bought puff pastry for this recipe because it is a quick and easy option but feel free to make your own pastry.

    Egg Wash

    Make your own egg wash by whisking 1-2 eggs. The egg wash will give your pie a golden colour.

    How to Make Leftover Turkey Pie

    1. Preheat oven at 200C/400F/ Gas 6. Heat ¼ cup of unsalted butter in a pan, add ½ diced onions, season with salt to taste, pepper to taste, 1 teaspoon of thyme and stir. Then, add ¼ cup of flour and stir for one minute.
    2. Pour ¾ cup of milk and ½ cup of chicken stock into the pan and stir. Bring the mixture to a boil and then cook on a low heat for 2-3 minutes.
    3. Remove the mixture from the heat and add 1 ½ half cup of mixed vegetables and 2-3 cups of leftover turkey.
    4. Line the oven dish with the puff pastry. Pour the mixture into a dish and cover it with more pastry. Brush the pie with egg wash and bake for 30 -40 minutes or until the pie is golden. Enjoy! 🙂

    Top Tips

    • When making a leftover turkey pie make sure there is enough filling in the pie.
    • Bake the pie on the middle shelf to avoid burning the top of the pie.

    Alternatives

    • You can use leftover chicken instead of turkey.
    • Also, feel free to add mushrooms and potatoes if you like.
    • If you don’t have puff pastry then you can use mashed potatoes and shredded cheese to top the turkey filling instead.
