Our family eats chicken about 2-3 times a week for dinner. It's basically a staple in our diet. That's why these Paleo chicken recipes are so helpful. I need a lot of different chicken recipes to sustain that many meals. Face it - we all get tired of eating the same thing over and over.

Chicken is so versatile. You can grill it, broil it, fry it or cook it in the instant pot *, the crock pot, or even an air fryer * or sous vide. I'm sure you can probably think of additional ways to cook chicken also.

Because chicken has both dark meat and white meat it can have so many different flavors and textures too. Chicken has a fairly mild flavor so that makes it ideal for many different recipes.

I can't think of a nationality that doesn't cook with chicken either. I think it's probably the most versatile protein there is. Just look at the recipes below and see how versatile chicken is.

I like chicken because it's relatively inexpensive and it is relatively low in fat. It's a win-win-win food. I hope you love these recipes as much as I do. Enjoy!

  • Creamy, Sun-Dried Tomato Chicken Thighs Recipe {Video}

This is one of the most popular recipes on my blog for a good reason. It's easy to get started by putting some ingredients in an oven-safe dish. Then all you have to do is wait for it to get tender and for a delicious sauce to basically make itself.

The sun-dried tomatoes give it a deep, rich flavor that pairs nicely with the creamy coconut milk * sauce. It tastes and looks a lot harder to make than it is and is a good choice for a comfort food for anyone on almost any diet.

I love to pair it with something to soak up the cream sauce, like mashed potatoes, cauliflower rice, mashed cauliflower, or zucchini noodles.

This is one of my children's favorite recipes! They love the battered and pan-fried pieces of chicken breasts on their own and I love how they are coated with arrowroot flour *. It's a good hack I think everyone should use, no matter what diet they are on.

The other hack in this recipe is using balsamic vinegar instead of soy sauce. It gives the sauce a tangy, sweet flavor without using soy sauce or coconut aminos * (although you could substitute coconut aminos * - I really do prefer the balsamic vinegar). It pairs really nicely with cauliflower rice.

  • Paleo Chicken Fajita Salad with Vinaigrette Recipe

This is a very versatile recipe and naturally gluten-free and dairy-free. My husband loves to cook just the chicken tenders with the sauce on their own paired with his favorite carb, onions and peppers. You can also mix it up by making them actual fajitas or it really is good on its own as a chicken salad in a bowl as written.

The marinade and vinaigrette is what makes this recipe so good! It has lime juice, garlic, cilantro, honey, Real salt *, olive oil and a few other ingredients that go together so well. You'll want to make extra sauce!

  • Healthy Slow Cooker Teriyaki Chicken Recipe

This is one of my favorite make-ahead freezer meals. It saves a lot of time and money because the main ingredients are simple and affordable - chicken thighs, onion, pepper, and zucchini.

What makes it special is the sauce that it simmers in all day in the slow cooker. It makes the thighs extra tender and flavorful without drying them out.

What I like to do is make a double batch so there are lots of leftovers then freeze the leftovers in individual freezer containers so I can pull it out of the freezer in the future for a quick, easy, healthy meal!

  • Maple Roasted Chicken Sweet Potato Skillet Recipe

I love how you can cook the entire meal in one pan. I also love how the sweet potatoes soak up the delicious sauce. It tastes like fall but I love it all year-round.

It only has a few main ingredients - skinless chicken thighs, carrots, onion, and sweet potato. But those simple, affordable ingredients taste completely different with a maple syrup *, lemon juice, rosemary, and cinnamon glaze.
