Inspired by Italian stromboli, this surprisingly simple vegan stuffed pizza is a meal and a treat in one. Served hot with warm tomato sauce or even cold as a snack or lunchbox meal, it’s plant-based comfort food that’s convenient, easy, impressive and, most importantly, tasty.

This stuffed pizza is packed with flavour, but uses non-traditional ingredients, such as roasted red peppers, vegan cheese and vegan deli slices.Use store bought pizza dough to save on time, or one of my pizza dough recipes if you prefer. And if you are not able to get a hold of TVP (textured vegetable protein) slices or a plant-based alternative to cold cuts, you can use strips of grilled veg instead, such as courgette and aubergine.

VEGAN STUFFED PIZZA,
STROMBOLI-STYLE

INGREDIENTS

One store-bought rectangle of pizza dough, approx. 400g/14 oz (or 1 portion of homemade pizza dough to make 1 pizza)
3 tbsp red pesto
150 g (5 1/4 oz) vegan deli slices* of choice, sliced in half
2 1/2 to 3 jarred roasted red bell peppers, drained and patted dry with kitchen towel, sliced in half
200 g (7 oz)vegan grated cheese
Around 20 basil leaves
1 tbsp olive oil
1tsppoppy seeds

Tomato based sauce to serve

DIRECTIONS

  1. Preheat your oven to 200°C (400ºF), on pizza setting if you have that oven function.
  2. Roll out pizza dough to a rectangular form of about 25.5 x 35.5cm (10 x 14 inches), and place it onto a baking parchment-lined baking tray.
  3. Spread the pesto along the centre third of the dough.
  4. Lay out the halved vegan slices, over lapping each other, in a row along the middle of the dough, atop the pesto.
  5. Top the vegan deli slices with red bell pepper slices, followed by the cheese and basil leaves.
  6. Using a small, sharp knife, make vertical slices in the dough from almost-to-the-filling to the outer edge of the dough, 1.8 cm (1-inch) apart. This will make 14 strips of dough. Fold one strip from one side of the dough across the filling in the middle. Take the strip of dough directly opposite the first and place it overlapping the first. Continue criss-crossing the strips of dough until you have a lovely braided effect.
  7. Brush the olive oil over the crust and sprinkle over the poppy seeds.
  8. Bake for 16-20 minutes or until the crust is golden brown and cooked through.
  9. Allow to cool slightly before slicing.
  10. Serve hot with warm tomato based sauce, or cold as a snack or lunchbox meal.

VEGANSK FYLLD PIZZA,
STROMBOLI-STYLE

INGREDIENSER

En butiksköpt rektangulär pizzadeg (alternativt en portion hemmagjord pizzadeg för 1 pizza)
3 msk röd pesto
150 g veganska TVP skivor, delade på mitten
2 1/2 till 3 grillade paprikor i burk, dränerade och torkade med en kökshandduk, delade på mitten
200 g vegansk riven ost (plus lite extra att strö över, om så önskas)
Ca 20 basilikablad
1 msk olivolja
1 tsk vallmofrön
Servera med en tomatbaserad sås (se min blog för några goda alternativ)

INSTRUKTIONER

  1. Förvärm ugnen till 200°C (400ºF), på pizza-setting om sådan finns.
  2. Rulla ut pizzadegen till en rektangulär form, ca 25,5 x 35,5 cm (10 x 14 tum) och placera på en bakplåt med bakplåtspapper.
  3. Bred peston längs den mittersta tredjedelen av degen (från kortsida till kortsida).
  4. Lägg på de delade veganska skivorna på peston längs mitten av degen så att de överlapper något.
  5. Lägg sedan över de grillade paprikaskivorna, följt av ost och basilikablad.
  6. Skär med en liten vass kniv vertikala snitt i degen, från kanterna nästan hela vägen fram till fyllningen. Placera varje snitt med ca 1,8 cm (1 tum) mellanrum. Detta resulterar i 14 st degsträngar. Vik den första strängen mot mitten och snett över fyllningen. Ta sedan strängen på motsatt sida och vik den så att den överlappar den första strängen. Fortsätt med nästa sträng så att du får ett korsmönster av deg över hela fyllningen.
  7. Pensla över olivolja och häll över vallmofröna.
  8. Baka i ugnen i 16-20 minuter eller tills ytan har fått en fin gyllenbrun färg och pizzan är genomlagad.
  9. Låt svalna något innan du skär den i bitar.
  10. Servera varm tillsammmans med en varm tomatbaserad sås, alternativt kall som ett mellanmål eller i matlåda.
