I believe goose meat has a subtle, but incredibly interesting nutty flavor that I have yet to find in any other wild game. It's a rich meat with full-bodied flavors that will widen eyes. Fortunately, goose breasts are incredibly simple to prepare and compliment a wide array of sauces and sides.

You want to firmly slice your way through the skin, then make long, sliding shallow cuts, keeping the side of your knife pressing against the rib bones. Continue cutting the breast out, using the same long, quick, shallow cuts, trying your best to get as much of the meat to stay attached to the breast as possible.

- Soak plucked and cleaned goose overnight in well salted water.
- Rinse and dry, then stuff with 2 onions and 2 apples, both quartered.
- Place breast side up in open roaster pan and cover with 2 strips thick bacon.
- Brown in 475 degree oven until bacon is crisp.
- Take all fat from pan and discard.
