Yakisoba, or stir-fried noodle, is a Japanese dish that I personally think is underrated! We always talk about ramen or udon but somehow, yakisoba is often left out even though it is one of the easiest recipe out there!

In Japan, you can find Yakisoba during festivals and as a quick bite on your street food adventure.

Yakisoba actually originated from Chinese chow-mein which is also a stir-fired noodle dish. The difference between the two noodle dishes is that yakisoba uses Worcestershire sauce which adds a sour taste that complements the ample amount of cabbage added.

There are various types of Yakisoba with different sauces but one of my favorite one is Modan-Yaki – a combination of okonomiyaki and yakisoba. But we’ll probably cover that in a different recipe😉For now, let’s stick to our traditional Worcestershire Yakisoba!

Yakisoba is really handy when it comes to using up your leftover ingredients – whether it’s meat or veggies. We use pork in this recipe but feel free to switch it up with chicken, beef, tofu or even seafood!

As for the veggies, we love adding crunchy vegetables such as carrot, cabbage and bell pepper. But you can most definitely add mushrooms or spinach as well! Again, any leftovers veggies you have in your fridge will probably work fine 🙂

For our convenience, we use packaged yakisoba noodles that doesn’t require any boiling. We got this Nama Yakisoba noodles from H-mart (HERE is the link). You can find it at your local Asian grocery store but if that’s not accessible to you, any dried noodles from an instant noodle pack works perfectly too (you’ll just have to boil it first obviously)!

Sauce Mixture:

  • 2 tbsp Worcestershire sauce
  • 1 tsp Soy sauce
  • 2 tsp oyster sauce
  • 2 tsp ketchup
  • 1 tbsp water
  • 1 tsp sugar

Yakisoba noodles:

  • 1 tbsp oil
  • ½ onion (sliced)
  • 2 cloves garlic (minced)
  • ½ lb Pork slices (any other meat/tofu works too)
  • 1/3 cup Cabbage (thinly sliced)
  • 1/3 cup Carrot (thinly sliced)
  • 2 packet yakisoba noodles
  • ½ Bell Pepper (to taste)
  • 1 tsp sesame oil

steps:

  1. First, make the yakisoba sauce by combining the Worcestershire sauce, soy sauce, oyster sauce, ketchup, water and sugar in a bowl. Then, combine the sauce mixture using a whisk or chopstick to create an even mixture. Set the sauce aside.
  2. In a wok, add cooking oil on medium-high heat. Then, add the onion and garlic once the oil is hot and saute onion and garlic for about 30 seconds.
  3. Next, add the pork slices or your preferred choice of protein into the wok. Stir fry until seared and slightly brown.
  4. Add the cabbage and carrot in and stir fry everything again until the vegetables are soft and tender. If the vegetables are taking a long time to get soft, you can add 2 tbsp of water.
  5. Lastly, add the yakisoba noodles and bell pepper. Mix them with all the ingredients before pouring the sauce mixture from step 1 into the wok and stir again for 1 minute.
  6. Take the wok off the heat, mix the sesame oil in and serve!

What kind of noodles to use for yakisoba? ›

Yakisoba does not use buckwheat soba noodles. Instead, it uses mushi chukamen (蒸し中華麺), which are steamed Chinese-style noodles made from wheat flour, kansui, and water. These noodles have a yellowish color due to the kansui but are not egg noodles.
