It’s National Guacamole Day.
Are you celebrating? I certainly am…this might be one of my new favorite holidays.
Now that I know it exists. #thanksinstagram
Anyway, if you haven’t heard already, Chipotle has given out their “secret” guacamole recipe on their website.
Best gift ever, right? I die for their guac…and even though I have been making it at home for years (my friend Jen taught me the ways long ago), there is just something about Chipotle’s that makes me overpay for it every single time. #green-gold
Table of Contents
Ingredients for Copycat Chipotle Guacamole
2–3 ripe Hass avocados – the riper, the better
juice fromone lime – or more to taste
fresh cilantro – you can omit if you aren’t a fan…or use extra if you love it (I love it)
diced red onion – if you want to get rid of some of the bite
jalapeño – you could also use serano pepper
coarse kosher salt – super key ingredient for the best guacamole
The funny thing – after reading their recipe, I have NO idea what that something is. Because I’ve been making guac the exact same way as them: same ingredients and same amounts. Well, I don’t usually put my jalapeno seeds in.
It’s super easy to make your own guacamole at home! Just simply:
Mash your avocados. I actually use a potato masher to make mine…I’m pretty sure they aren’t this method at Chipotle, or anywhere else for that matter. But it works for us.
Mix in the remaining ingredients. Add everything else in, then stir to combine.
Taste and season.I love using a chip to for tasting instead of a spoon, because it gives you a good idea if you need more salt in your guac or not. If you aren’t eating your guac with chips, then you can just use a spoon!
It really couldn’t be easier to make at home or make to bring to a party. I constantly get asked for this recipe, by the way, so if you need a quick crowd pleasing appetizer, look no further.
It’s totally FIX approved, too, as long as you measure in the BLUE container. I actually love to make it ahead of time and use it on Taco salads. Here’s a trick to keeping it fresh – leave an avocado pit in the bowl and your guacamole won’t turn brown.
So cool, right?

Notes
21 Day Fix: measure your guacamole in your blue container! Don't forget to count your chips as a yellow 🙂
WW:Green, Blue, Purple - 4 points per 1/2 c. guac; 2 points per corn tortilla if you are making your own chips!
Unlike fake versions which have included add-ins like garlic or tomatoes, Chipotle's guac uses just six ingredients: avocados, lime juice, cilantro, red onion, jalapeño and kosher salt.
“Each panned guac gets sealed airtight with Saran Wrap,” he said. “Then it gets lidded, labeled and stored for later use. This process ensures freshness and prevents browning,” he continued.
The TikToker affirms Bauze's statements in another video from the same series, explaining that Chipotle uses high-quality avocados and only hand-cut ingredients.
Pour a thin but visible layer of water or lemon/lime juice over the guacamole to form a barrier with the air. Cover the dish with plastic wrap, pushing the wrap, so it is flush with the guacamole to prevent air pockets, or put the guacamole in a sealed tub.
Authentic guacamole doesn't contain fillers and unnecessary ingredients. All you need is avocados, onion, tomatoes, cilantro, jalapeno pepper, lime juice, garlic, and salt. Easy and delicious!
We make it every day! Every day before the shift, we make the guac with fresh avacados, onions, jalapeños, cilantro, and citrus juice. We then put it in the fridge so that it doesn't get ruined, and we only allow it to sit on the line for two hours at a time.
Although adding mayonnaise to guacamole can be a divisive topic, plenty of people swear by it for its textural benefits. Blending just a little bit of mayo into your guacamole will help make it extra creamy and silky smooth for dipping or spreading.
One reason restaurants upcharge for guacamole is that it's made in-house. Chipotle's guacamole-making process was put on display in a viral TikTok video last year, which underscored the fact that it is indeed made from scratch.
Chips with salsa or chips with guacamole are two menu items that do not have dairy. In terms of individual food items, there are no milk-based ingredients in any of their meats, beans, taco shells, chips, or tortillas.
To keep the leftover guacamole from browning, the employee rips off a sheet of plastic wrap, then presses it all the way down to the surface of the guacamole, knocking out the air that would be in the container if it was just sealed with a lid.
This was our runaway favorite, the only one that tasted “fresh” and “homemade” with a “perfect consistency” and “perfect amount of salt.” The bright green color threw some tasters for a loop, though: It was so vibrant that many wondered if the green was artificial. (Nope, just Chipotle magic.)
Last year the company served more than 43 million pounds of avocados from Mexico ; the company sources exclusively from Mexico in certain months to ensure the taste and quality of its guacamole is the absolute best. Chipotle also buys avocados from California , Chile and Peru based on peak growing seasons.
Diana Kennedy all but forbids it in The Art Of Mexican Cooking, saying it “spoils the balance of flavors.” In Hugo Ortega's Street Foods Of Mexico, Ortega writes, “the secret to a good guacamole is to respect the avocado flavor and not drown it in lime juice” (he adds a scant 1/4 teaspoon for two large avocados).
Topping off your avocado dip with water keeps air, at least in part, from being able to penetrate the guacamole, which keeps it from browning. By using this simple technique, you can keep the brown at bay for about two days (maybe longer if you're lucky).
The avoFresh contains ascorbic acid (vitamin C) and calcium carbonate. You add the powder mixture to fresh mashed avocado. The avoFresh keeps the avocado fresh and from turning that off-putting brown that avocado pulp gets when exposed to air.
An exception to the low-fat rule is guacamole. “Guac has some plant-based saturated fat but mostly contains monounsaturated fats (similar to olives and olive oil), which are heart-healthy fats,” Leonard says. Even so, keep a close eye on the amount of guacamole on your burrito bowl and don't ask for extra.
Made in-house, the vegan-certified meat option was made with a base of pea protein that was flavored with ancho chilies and chipotle peppers, tomato paste, crushed garlic, Spanish smoked paprika, and extra virgin olive oil.
We get most of them from Mexico, but we will shift where we'll get more of them within the next month or so from California. Later in the summer and in the fall, we get them from Peru and Colombia.
